Directions

Blend the pandan leaves with water till fine and strain through a fine sieve.
Bring the pandan juice to a boil in a pan.
Add the agar-agar powder and sugar into the mixture. Reduce the heat and simmer for 5 minutes to dissolve while stirring occasionally.
Pour in the milk and cook for 2 minutes before removing the heat and strain. Transfer the mixture into a large tray and let it set in the refrigerator.
Place the raspberries and sugar in a sauce pot and bring it to boil until the raspberries disintegrate before adding the lemon juice in. Remove from heat and set aside to chill.
Cut the pandan curd into squares and top them with raspberry compote. Ready to serve.
