Deep Fried Tiger Prawns

Cooking Oil
, Sunflower Oil, Canola Oil, Soy Bean Oil or Duck Fat

Tiger Prawns
, peeled and deveined

cup
Plain Flour
2
Eggs
, beaten with 2 tbsp water
Fresh Breadcrumbs
Lemon Wedges
, for serving
Tartar Sauce
, for serving

Directions

Mix plain flour, salt and pepper in a bowl.
Completely dry the prawns with a paper towel.
Dip them in flour, seasoned with salt and pepper, to coat evenly.
Dip the prawns in the egg wash, let excess drip off and dip into breadcrumbs to cover completely, then lay the prawns on a tray.
Fry the prawns in batches in the oil until they are golden brown.
Remove with slotted spoon and drain on paper towels.
Serve hot with lemon wedges and tartar sauce.
