Simply divine, these pan-fried Threadfin fish fillets are encased in a chilli paste, infused with the distinctive flavour of lemongrass. Serve with a bowl of rice for a delicious meal.

, you can also make your own from dried chillies

Lemongrass
, bruised

Coriander
, roughly chopped

Water

teaspoon
Ground Tumeric

Directions

Marinate fish with ground tumeric.
Heat oil in a pan and pan fry fish till cooked then set aside. Allow it to drain on a paper towel.
Fry onions till slightly brown then add chilli paste, lemongrass, water and salt to form a thick sauce.
Add fish into the pan and mix with sauce.
Plate and serve with white rice.
