Drool over this savoury seafood dish of fresh mussels smothered in a thick mixture of olive oil, garlic, cream and spring onions and encrusted with a layer of bread crumbs and melted cheddar cheese.

Directions

Preheat oven to 200°c.
Remove any beard, grit and dirt from mussels. Wash well, drain and pat dry.
Heat a saucepan over medium heat, warm olive oil then add garlic, heavy cream, chicken stock, coriander, spring onions and lime juice. Simmer till mixture thickens.
Spoon about 1 teaspoon of the mixture onto the mussels and arrange in a single layer on a baking tray with a bed of salt. This will prevent the mussels from toppling over.
Top each mussel with breadcrumbs and cheese.
Bake in oven for about 10 to 15 minutes at or until golden brown.
Plate mussels and garnish with spring onions.
