Fay Khoo shares her three easy to make sauces which turn a simple baked fish, whether it be a plain old fillet of snapper or an expensive slice of Bluefin tuna, into a meal fit for any food enthusiast.

Whole Egg Mayonnaise

Sweet Chilli Sauce

Brown Sugar
Juice of 1 Calamansi Lime

Directions

Preheat oven to 200°c.
Use a sharp knife to make small slits in the fish skin.
Combine the butter and garlic and spread 1/2 a tablespoon of the butter mixture in the cavity of the fish.
Spread the remaining mixture over the fish.
Place on a baking tray lined with non-stick baking paper and bake for 30–35 minutes or until cooked through.
For the lemon salt, combine salt and lemon rind thoroughly and set aside.
For the aioli, combine mayonnaise and minced garlic thoroughly and set aside.
For the tangy chilli sauce, combine fish sauce, sweet chilli sauce, lime juice, coriander throughly and set aside.
Plate fish from oven. Serve with lemon salt, aïoli and lemon wedges or with the tangy chilli sauce.
