Fine White Sugar

Mascarpone Cream

Unsalted Butter

Directions

Combine the Blueberries with the caster sugar, red wine and bring to the boil and simmer for 3-4 minutes.
Heat a griddle pan to a medium to high heat.
Cut two slices of the lemon loaf into 1 centimetre pieces and cut them diagonally across to get 4 irregular triangle shapes.
Melt butter in a pan and char-grill on both sides until well-marked and warmed through.
Chiffonade mint leaves and add white sugar, roughly chop to combine.
Serve on a plate with the blueberries, a spoonful on Mascarpone and sprinkle over some mint sugar
