Using chia seeds to thicken low-fat coconut milk is one way of incorporating these little nutritional wonders into your diet. Packed with Vitamin B and other essential minerals, they give you an energy boost and are a great source of your daily nutrient needs.

Ingredients

millilitres
Light Coconut Milk
, preferably organic

tablespoons
Honey
3
tablespoons
Chia Seeds
, preferably the black ones

Lime
, juiced
Shaved Coconut Flesh
A few pieces
Mango
, sliced

Directions

Place the coconut flakes on a baking tray and pop them in a low heated oven, at 140 degrees Celsius for approximately 10 minutes or until golden and crisp.
These can be made ahead, stored in an air tight container until used.
Pour the coconut milk into a mixing bowl, add the honey, lime and chia seeds. Stir well to make sure the honey dissolves.
Spoon the mixture into bowls or glasses.
Cover the bowls with glad wrap and place in the fridge for a minimum of 4 hours.
Have a taste and add a drizzle of honey if desired.
Top with the coconut flakes and sliced mangos, serve chilled.
