Ingredients

Slider Buns

teaspoon
Garlic

Olive Oil
Black Pepper

Snapper Fillets
, or other white fish fillets
Watercress or Rocket
Sea Salt

tablespoon
Butter

Egg Yolks
1/2
teaspoon
Dijon Mustard
Juice of 1/2 Lemon

Directions

Portion the fish into 10 equal pieces roughly the same size as the slider bun.
In a mixing bowl, whisk egg yolks with dijon mustard.
Pour in olive oil slowly while mixing, then add in the garlic, black pepper, sea salt and lemon juice.
Cut slider buns in half, butter the inner sides and top of the bun.
To serve, butter the insides and outsides of each slider.
Caramelise the sliders on both sides in a hot pan on medium heat.
Season fish fillets with salt and pepper.
Heat a pan with olive oil and place fillets on skin side up for 1-2 minutes on each side.
Spread aioil sauce on bottom half of the bun then add some rocket leaves.
Add the cooked fillets on rocket leaves, drizzle with aioil and lemon juice.
Cover with top half of bun and serve.
