Asian Cauliflower "Fried Rice"

Using cauliflower instead of rice is a genius hack to save those extra calories for an, of course healthy, dessert. Or skip it and go for a run instead after fuelling up on essential nutrients with this dish.

Cilantro

A pinch of
Sugar
A splash of
Fish Sauce

Directions

Roast the cauliflower in oven for 20 minutes.
Pulse roasted cauliflower in a food processor until it’s the size of rice.
Dice bacon and fry over medium heat until crispy.
Fry a thin egg omelet. Slice thinly and set aside.
Fry chopped onions, add in sliced mushrooms, add in ginger, and a dash of salt, pepper, and sugar.
Lower heat. Add in the cauliflower rice, herbs, and egg omelet to fry. Splash in some fish sauce.
Toss on the bacon bits on top before serving.
